1Add 2 cups of warm water, 2 and 1/4 teaspoons of yeast, and 1 tablespoon of sugar to a bowl and whisk well. Let it sit for about 5 minutes until frothy.
2Add 5 cups of all-purpose flour, a little bit of salt, and 1/2 cup of butter to the yeast mixture.
3Knead the mixture in an electric mixer for about 5 minutes. If it's sticky, add about another 1/4 cup of flour.
4Dump the dough onto the counter and knead it by hand for a couple of minutes until it forms a nice, smooth, soft ball.
5Place the greased dough back into the bowl, cover it, and let it rise in a warm spot for about 1 to 1.5 hours. Placing it in the oven with the light on works well.
6Divide the dough into 8 equal portions.
7Roll each portion into a rope about 24 inches long.
8Shape each rope into a pretzel.
9Boil the shaped pretzels in water with some baking soda for about 45 seconds per side.
10Remove the pretzels from the pot and place them on a cookie tray lined with parchment paper.
11Brush the pretzels with an egg wash (1 egg and 1 tablespoon of water, beaten).
12Bake in the oven at 450°F for about 10 minutes.
13In a measuring cup, mix melted butter with garlic powder, onion powder, Italian seasoning, and shredded Parmesan cheese.
14Brush the baked pretzels with the butter and seasoning mixture.
15Sprinkle extra Parmesan cheese on top.
16Broil in the oven for a couple of minutes until the tops are crispy.
