High Protein Cheeseburger Burritos

Directions

  1. 1To start, make the bone broth caramelized onions by adding small amounts of beef bone broth to the diced yellow onions until an entire 16 oz container has been entirely reduced.
  2. 2Cook onions over medium-high heat until all water has evaporated and they begin to brown/stick to the pan, without adding any salt.
  3. 3Deglaze with approximately 4oz of beef bone broth at a time, stir and boil until liquid is completely reduced, and repeat until you've fully reduced 16oz of bone broth into the onions.
  4. 4Add a splash of soy sauce for extra flavor and color to the caramelized onions.
  5. 5To the same pan, add extra lean ground beef, the seasoning blend (6 tsp coarse salt, 4 tsp onion powder, 4 tsp garlic powder, 4 tsp black pepper, 4 tsp oregano, 2 tsp cumin), a 14.5oz can diced tomatoes, about half of the caramelized onions, and a bunch of fat-free and reduced-fat cheddar cheese.
  6. 6Add diced green onions to the meat mixture.
  7. 7Toss the meat mixture in the fridge for a few minutes to let it thicken up.
  8. 8For the low calorie caramelized onion burger sauce, add 120g light mayo, 120g plain greek yogurt, 100g sugar free ketchup, 4 tsp sweet relish, the other half of your caramelized onions, and garlic, pepper, and salt to taste.
  9. 9Give the sauce a mix until completely smooth.
  10. 10Assemble the burritos by filling 14 tortillas with the meat mixture and sauce.
  11. 11Store the assembled burritos frozen.

Tips

  • Place meat mixture in a bowl and refrigerate for approximately 20 minutes to help it thicken and make rolling easier.
  • When transferring meat mixture to a bowl to refrigerate, weigh the filling to make perfectly evenly sized burritos by dividing the total weight by 14.
  • To reheat: remove from freezer, wrap in a paper towel, microwave for 2 minutes to defrost, then air fry at 375 for 6-8 minutes to crisp up your tortilla.
  • Do not add any salt to the onions while cooking until water has evaporated.
  • Add a splash of soy sauce for extra flavor and color to the caramelized onions.
