Serves 1

Directions

  1. 1Add the spaghetti pasta to an already boiling pot of water, along with a big handful of salt.
  2. 2Add four tomatoes, one-fourth of an onion, and two garlic cloves to the same pot.
  3. 3Let everything cook for about 8 to 10 minutes or until the pasta is al dente.
  4. 4Once done, move the veggies to a blender cup and set them aside.
  5. 5Drain your pasta, but also make sure to reserve about 1 cup of pasta water.
  6. 6Head back to your blender cup and add in 1 cup of Mexican crema and 2 tablespoons of consomé de pollo.
  7. 7Blend until the mixture is super smooth.
  8. 8In another pan, add 1 tablespoon of butter.
  9. 9Once the butter starts to bubble, add in your sauce.
  10. 10Let the sauce simmer for about 5 minutes or until it darkens.
  11. 11At this point, add your pasta back in, mix everything really well, and let it cook together for another couple of minutes.
  12. 12Add in some of the pasta water that you reserved.

Ingredients

  • 1 package Spaghetti pasta
  • handful Salt
  • 4 Tomatoes
  • 0.25 Onion
  • 2 Garlic cloves
  • 1 cup Mexican crema
  • 2 tablespoons Consomé de pollo

  • 1 cup Pasta water

Tips

  • You can boil the vegetables separately, but boiling them with the pasta saves an extra pot to clean.
  • Season your water like the sea whenever you’re boiling pasta.
  • If you want your pasta extra saucy, add in some of the reserved pasta water.
  • You can serve this pasta with chicken or whatever side you prefer.
