Tennessee Onion Casserole

Directions

  1. 1Peel and thinly slice onions to a thickness of approximately 1/4 inch.
  2. 2Toss the onions in a large bowl to separate all the rings.
  3. 3In a small bowl, combine salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne pepper, and stripped fresh thyme leaves.
  4. 4Add olive oil to the onions and toss to coat.
  5. 5Add half of the spice and herb mixture to the onions and toss thoroughly. Add the remaining mixture and toss again.
  6. 6Layer half of the seasoned onions into a greased 13x9 baking dish.
  7. 7Sprinkle 2 oz of grated cheddar and 2 oz of grated gruyere cheese over the onion layer.
  8. 8Top with the remaining onions followed by the remaining 2 oz of cheddar and 2 oz of gruyere cheese.
  9. 9Top with a layer of grated pecorino romano cheese and dot the surface with small pieces of butter.
  10. 10Cover the dish tightly with foil and bake at 350 degrees for 45 minutes.
  11. 11Remove the foil and bake for an additional 30 minutes.

  • 3 lb sweet onion
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp granulated garlic
  • 1 tsp dry mustard
  • 2 tsp brown sugar
  • 0.5 tsp cayenne pepper
  • 1 tsp fresh thyme leaves, stripped
  • 4 oz Tillamook mild cheddar cheese, freshly grated
  • 4 oz gruyere cheese, freshly grated
  • 0.5 cup pecorino romano cheese, freshly grated
  • 3 tbsp butter, cut into small pieces

Tips

  • Use either light or dark brown sugar.
  • You could use sharp cheddar instead of Tillamook mild cheddar.
  • You could also use parmesan-reggiano or grana padano instead of pecorino romano.
