Cheeseburger Hot Pockets

Directions

  1. 1In a bowl, mix flour and Greek yogurt until clumpy.
  2. 2Divide the dough into 8 pieces.
  3. 3Knead the dough into smooth balls.
  4. 4Sear ground beef in a pan until golden and crispy.
  5. 5Add diced onion and seasonings (garlic powder, smoked paprika, cayenne pepper, salt, black pepper).
  6. 6Stir in beef stock, light cream cheese, ketchup, mustard and pickles.
  7. 7Mix until creamy.
  8. 8Roll out each dough ball.
  9. 9Fill with the cheeseburger mix and some low-fat cheese.
  10. 10Fold, seal and gently press to flatten.
  11. 11Brush your pan with a bit more oil.
  12. 12Place the hot pockets in the pan, cover and cook 3 to 4 minutes per side until perfectly golden and crispy.

  • 400 g lean ground beef (5% fat or leaner)
  • 1 medium white onion, diced
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 100 ml beef stock
  • 80 g light cream cheese
  • 45 g reduced-sugar ketchup
  • 60 g diced pickles
  • mustard
  • 200 g low-fat grated cheese
