Smoked Pig Wings with Bacon Jam BBQ Glaze

Serves 4

Directions

  1. 1Place pork wings in a large container and pour over the hot sauce along with 2 tablespoons of your favorite BBQ dry rub. Toss and shake until evenly coated.
  2. 2Refrigerate for 2–4 hours to let those flavors soak in.
  3. 3Preheat your pellet grill to 275°F. Arrange the pork wings directly on the grates and sprinkle with a little additional BBQ seasoning.
  4. 4Smoke for 2 hours to build that beautiful color and smoky flavor.
  5. 5Transfer the pork wings to an aluminum pan. Add the butter, bacon jam, BBQ sauce, and remaining dry rub. Toss to coat, then cover tightly with aluminum foil.
  6. 6Return the covered pan to the pellet grill for another 90 minutes to let everything get tender and delicious.
  7. 7Remove the foil and continue cooking for approximately 30 minutes, allowing that bacon jam BBQ glaze to thicken and caramelize. Cook until the pork is probe-tender, typically around 195–205°F internally.
  8. 8Let rest for 5–10 minutes, then serve with ranch or blue cheese dressing.

Ingredients

  • 3 lbs pork wings (mini pork shanks)
  • 1/2 cup hot sauce
  • 3 tbsp BBQ dry rub
  • 4 tbsp butter
  • 1/2 cup bacon jam
  • 1/2 cup BBQ sauce
  • for dipping ranch or blue cheese dressing (optional)
