Dice up a small onion.

Mince up garlic.

Thinly slice some green onions for garnishing.

Add water, kosher salt, chicken bouillon, sugar, oyster sauce, soy sauce, and white pepper to a measuring cup to make the sauce.

Stir the sauce and taste test it to ensure it's balanced with saltiness and a hint of sweetness.

Crack 3 eggs into a bowl and scramble them.

Add some oil to your wok.

Add the diced onions and minced garlic to the wok and cook for about a minute.

Pour in the scrambled eggs and scramble them until they are a soft scramble.

Add day-old rice to the wok. The rice was cooked and then put in the fridge right away.

Add a little more oil to fry up the rice.

Pour in the prepared sauce.

Stir until the rice is evenly coated with the sauce.

Add the peas and carrots.

Drizzle some sesame oil into the fried rice.

Top with some green onions.

Tips
