Add more olive oil and sliced onions to the pot, then cook until caramelized.

Add minced garlic, dried oregano, dried thyme, and salt to the caramelized onions and mix.

Stir in flour until combined.

Pour in beef broth and red wine, then add Worcestershire sauce and stir until well combined.

Return the seared chuck roast to the pot, covering it with the onion mixture and liquid.

Cover the pot and bake until the roast is tender.

Shred the cooked pot roast using two forks and mix it with the sauce.

Serve the French onion pot roast over mashed potatoes and garnish with fresh parsley.
