French Onion Pot Roast

Directions

  1. 1Season the chuck roast with salt and pepper.
  2. 2Heat olive oil in a pot and sear the chuck roast on all sides until browned.
  3. 3Remove the chuck roast from the pot.
  4. 4Add more olive oil and sliced onions to the pot, then cook until caramelized.
  5. 5Add minced garlic, dried oregano, dried thyme, and salt to the caramelized onions and mix.
  6. 6Stir in flour until combined.
  7. 7Pour in beef broth and red wine, then add Worcestershire sauce and stir until well combined.
  8. 8Return the seared chuck roast to the pot, covering it with the onion mixture and liquid.
  9. 9Cover the pot and bake until the roast is tender.
  10. 10Shred the cooked pot roast using two forks and mix it with the sauce.
  11. 11Serve the French onion pot roast over mashed potatoes and garnish with fresh parsley.
