1Prepare the yeast mixture by adding room temperature milk, sugar, and yeast. Mix well and set aside. If using active dry yeast, activate it before use.
2In a separate bowl, sift bread flour (or use all-purpose flour with slightly less liquid). Add salt and mix.
3Slowly pour the yeast mixture into the dry ingredients and mix until a dough forms.
4Knead the dough for 3-4 minutes, then add softened butter and knead for another 15 minutes until smooth and elastic. Do the windowpane test to check the elasticity.
5Place the dough in a greased bowl, cover, and let it rise for 1 hour. For cold kitchens, proof it in a switched-off oven or microwave with a cup of hot water.
6Prepare the garlic butter mixture: mix garlic paste, softened butter, chili flakes, chopped parsley, and salt.
7Punch down the risen dough, roll it out evenly, and spread the garlic butter mixture over the surface.
8Generously sprinkle mozzarella and cheddar cheese over the garlic butter.
9Cut the dough into strips, stack them, and place them in a prepared loaf pan.
10Let the assembled dough proof for another hour.
11Preheat the oven to 180°C (350°F). Brush the top of the dough with extra garlic butter.
12Bake for 30 minutes until golden brown and crispy.
