Place two blocks of Philadelphia cream cheese in an aluminum pan.

Add two cans of drained Baja style corn blend.

Add a quarter cup of sour cream.

Add 16 ounces of pepper jack cheese.

Add a bunch of diced cilantro.

Add Tajin seasoning.

Mix everything.

Cook in a smoker at 225°F for two hours, giving it a good mix halfway through.

Alternatively, you can cook it in the oven at 350°F for half an hour, giving it a good mix halfway through.

Or cook it in a crock pot on low for two hours, giving it a good mix halfway through.

Top it with crumbly cheese (cotija or feta) and more Tajin.
