Funfetti Cheesecake Stuffed Birthday Cake Oreo Cookies

Directions
- 1Mix cream cheese, vanilla, powdered sugar and sprinkles for the funfetti cheesecake filling.
- 2Pipe out individual portions of the cheesecake filling.
- 3Freeze the individual portions.
- 4Whisk together flour, cornstarch, baking soda and salt.
- 5Combine the softened cream cheese and butter, then add eggs, vanilla extract, white sugar and brown sugar and whisk until smooth.
- 6Fold in the dry ingredients.
- 7Add crushed birthday cake oreos and sprinkles.
- 8Chill dough for at least 3 hours.
- 9Make dough balls with the cheesecake filling inside.
- 10Bake on 350 for about 18 minutes.
- 11Top the cookies with a drizzle of white chocolate, crushed oreo and more sprinkles.

- 3 tsp vanilla or cake batter extract
- 1 cup brown sugar
- 1 cup white sugar
- 2 rows birthday cake oreos

- sprinkles
