Serves 4

Directions

  1. 1In a bowl, mix 2 cups of Maseca, 1 teaspoon of salt, and 2 cups of warm water until a dough forms.
  2. 2Knead the dough for 5 to 10 minutes, then let it rest for 15 minutes covered with a towel.
  3. 3Form the dough into small balls, flatten them between your hands to create a gordita shape.
  4. 4Add avocado oil to a comal or griddle. Place the gorditas on the hot surface and cook until they puff up in the center.
  5. 5Flip the gorditas and cook until they have a good color and the centers have puffed.
  6. 6Place a cooked gordita on a paper towel, slice it open and add the desired filling.
  7. 7Add refried beans and shredded queso chihuahua to the gorditas.
  8. 8Place the stuffed gorditas back on the comal to melt the cheese.
