Directions

  1. 1Place a pot on medium-low heat.
  2. 2Add one cup of coconut sugar to the pot.
  3. 3Cook and stir the sugar until it becomes sticky.
  4. 4Once the sugar is sticky, add half a cup of water.
  5. 5Turn up the heat slightly to bring the mixture to a simmer.
  6. 6Once it starts to simmer, add cinnamon sticks (one big one or three small ones).
  7. 7Add a little bit of lemon skin to the pot.
  8. 8Add some lime skin.
  9. 9Add some orange skin.
  10. 10Add a dash of coriander.
  11. 11Add a little bit of nutmeg.
  12. 12Let the mixture simmer for 5 to 10 minutes until it thickens and all the flavors combine.
  13. 13After 10 minutes, take the pot off the heat.
  14. 14Strain the mixture into a glass jar to remove any peels or other solids.
  15. 15Add one teaspoon of vanilla to the syrup.
  16. 16Add half a teaspoon of bitters (ensure it's without red dye).
  17. 17Let the syrup cool for about 30 minutes.
  18. 18Place ice in a cup.
  19. 19Pour one part of the homemade syrup into the cup with ice.
  20. 20Add three parts of sparkling water to the cup.
  21. 21Stir the mixture with a straw.
  22. 22Taste your homemade Coca-Cola.
