Directions

  1. 1Add a healthy splash of oil to a pan and heat over medium-high heat.
  2. 2Add 1.5 pounds of yellow baby potatoes, cut into bite-sized halves or fourths.
  3. 3Season the potatoes with some salt.
  4. 4Sprinkle half a package of taco seasoning over the potatoes.
  5. 5Toss all the ingredients together to ensure the potatoes are well coated with oil and seasonings.
  6. 6Cook the potatoes for about 5 to 7 minutes until they start to soften, but are not fully done.
