Cut the boneless, skinless chicken thighs into bite-sized pieces.

In a large mixing bowl, combine soy sauce, sugar, mirin, minced garlic, grated ginger, and chopped green onion.

Add the diced chicken to the marinade mixture and mix well.

Marinate the chicken for at least 24 hours.

In a separate bowl, combine mochiko flour, cornstarch, and kosher salt.

Add the flour mixture and an egg to the marinated chicken.

Mix thoroughly until the chicken is coated in a thick batter.

Heat oil in a pan to 350°F (175°C).

Carefully place the battered chicken pieces into the hot oil.

Fry the chicken for 5-7 minutes until crispy and golden brown.

Remove the fried chicken and place it on a wire rack to drain excess oil.

Drizzle Sriracha mayo over the chicken.

Sprinkle with furikake.

Garnish with additional chopped green onion.

6 cloves minced garlic
1 tsp grated ginger
1 egg
2 stalks chopped green onion
0.75 cup mochiko
0.25 cup cornstarch
1 tsp kosher salt

Tips
For optimal aloha, make sure you marinate your chicken for at least 24 hours.
The thick batter helps lock in the flavor so your chicken comes out crispy and bouncy.
Shake off excess marinade from chicken before frying.
Garnish with sriracha mayo, furikake and more green onion for an addictively good taste.
Cut chicken thighs roughly into 1.5-2 inch cubes before marinating.
Place chicken on a wire rack to drain after frying for 5-7 minutes in 350° oil, after shaking off excess marinade from chicken.
Mix all marinade ingredients together and coat chicken well, and marinate overnight before cooking it in oil for 5-7 minutes.
The optimal temperature of oil for frying is 350 degrees Fahrenheit. The chicken needs to be fried for 5-7 minutes.
