1Mix lukewarm water with yeast and sugar and leave for 5–10 minutes until foam appears.
2Add the flour and salt and knead for 8-10 minutes until the dough is flexible and even.
3Add the olive oil and knead until the dough is uniform.
4Cover and let rise in a warm place for about an hour and a half until the dough doubles in volume.
5Divide the dough into small balls (about the size of a tennis ball) - 8 balls from this amount.
6Cover and allow a second proofing of about an hour.
7Meanwhile, preheat the oven to the highest possible temperature (250–270 degrees) with a baking tray inside so that it is hot.
8Open each ball with your hands to a flat circle like a thin pizza.
9In the center of each circle, place a slice of tomato, strips of roasted pepper, crumbled feta cheese, a handful of zaatar and drizzle generously with olive oil.
10Carefully transfer to the hot tray and bake for 6–10 minutes, depending on the strength of the oven, until the pastry is nicely golden.
11When it comes out of the oven, grate fresh lemon zest on top and sprinkle with Atlantic sea salt.
