1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2In a skillet, heat olive oil over medium heat. Add the chopped fresh spinach and minced garlic. Cook until the spinach wilts and any excess moisture evaporates, about 3-5 minutes. Remove from heat and let it cool slightly.
3In a mixing bowl, combine the softened cream cheese, cooked spinach mixture, salt, and pepper. Mix well until creamy and evenly combined.
4Roll out the thawed puff pastry sheet on a lightly floured surface into a rectangle.
5Spread the creamy spinach and cheese mixture evenly over the puff pastry sheet, leaving a small border around the edges. Sprinkle Feta cheese crumbles over the creamy spinach mixture, reserving some to sprinkle on top of the rolls.
6Starting from one end, tightly roll up the puff pastry sheet into a log.
7Using a sharp knife, slice the puff pastry log into 8-10 rolls.
8Place the puff pastry rolls onto the prepared baking sheet, spacing them apart.
9Brush the tops of the puff pastry rolls with beaten egg wash.
10Sprinkle the remaining Feta cheese crumbles over the tops of the rolls.
11Bake in the preheated oven for 15-20 minutes, or until the puff pastry is golden brown and puffed up.
12Remove from the oven and let cool slightly before serving.
