Butter Mochi Cake

Directions

  1. 1Add one box of mochiko to a glass bowl. If you only have half a box, supplement with rice flour.
  2. 2Add 2 teaspoons of baking powder.
  3. 3Add 1/4 teaspoon of salt.
  4. 4Melt 1.5 sticks of butter in the microwave.
  5. 5Crack 5 eggs into a separate glass bowl.
  6. 6Whisk the eggs.
  7. 7Add 1 and 1/4 cups of sugar to the eggs.
  8. 8Open one can of coconut milk.
  9. 9Pour the coconut milk into the egg and sugar mixture.
  10. 10Add a little bit of vanilla to the wet ingredients.
  11. 11Whisk the wet ingredients together.
  12. 12Pour the melted butter into the wet ingredients and whisk.
  13. 13Add the dry ingredients (mochiko, baking powder, salt) to the wet ingredients in two halves.
  14. 14Gently mix the batter until combined.
  15. 15Crumple parchment paper, wet it, and squeeze out all the water.
  16. 16Line the baking dish with the wet parchment paper.
  17. 17Take some of the mochi batter and put it into a separate small bowl.
  18. 18Add matcha powder to the small bowl with some batter and mix until green.
  19. 19Pour a layer of the plain mochi batter into the prepared baking dish.
  20. 20Sprinkle chocolate chips over the first layer of batter.
  21. 21Pour another layer of the plain mochi batter on top of the chocolate chips.
  22. 22Add dollops of the matcha batter over the second layer of plain batter.
  23. 23Take a bamboo stick and swirl the matcha batter into a spiral design.
  24. 24Bake the mochi cake in the oven at 350°F (175°C) for 45-50 minutes.
  25. 25Cut the cooled mochi cake into squares.
