2Transfer the chiles to a blender, and add garlic, white vinegar, smoked paprika, chipotle chili powder, Mexican oregano, cumin, bay leaf, salt and pepper.
3Blend until it becomes a nice paste.
4Mix the paste into the ground beef and massage with a glove.
5Let it rest in the fridge overnight.
6Saute the onion in a pan.
7Add the chorizo and allow it to brown.
8Whisk the eggs and add them to the pan.
9Cover and let the eggs cook.
10Add a touch of cheese and some cilantro.
11Scoop it up with a tortilla.
