Mix together organic rye flour, salt, and seeds of your choice (pumpkin, hemp, and sesame seeds).

In a jug, whisk together coffee, lukewarm water, yeast, miso paste, and maple syrup.

Once the yeast is activated, fold the coffee mixture into the dry ingredients until it becomes a sticky, wet dough.

Cover the dough with a wet, damp towel and let it rise for about an hour.

Turn the risen dough into your loaf tin, sprinkle with more seeds, and bake for 45 minutes.
