Combine fish with salt, pepper, cumin, paprika, garlic powder, oregano, laurel leaves, vinegar, and water in a bowl.

Mix well, cover with plastic wrap, and let it rest in the refrigerator.

Remove the fish from the liquid, drain it, and coat with flour.

Fry the coated fish in oil until golden.

Remove the fish, place on paper towel to drain excess oil, and add a final touch of salt.

600 g mero, rape, caballa, atún, boquerones or cazón
80 ml vinagre
100 ml agua
1 cda sal
1/2 cda pimienta
1 cda comino
1 cda orégano
1 cda pimentón dulce (paprika)
3 cdas ajo molido
2 hojas de laurel
harina
aceite

Tips
Instead of 3 tablespoons of garlic powder, you can use 3 crushed or minced garlic cloves.
The marinating time should be at least 3 hours, or even longer.
