1Preheat oven to 220°C. Pat the tofu dry and crumble into small pieces in a baking tray. Toss with oil, salt, pepper, and cornflour. Bake for 20–25 minutes, shaking halfway.
2While the tofu bakes, prepare the sauce.
3Heat a little oil in a pan and sauté diced garlic, ginger, shallots, and chilli until fragrant.
4Add chopped runner beans or veg of choice and cook until tender.
5Stir in the baked tofu, sauce and shredded Thai basil.
6Serve hot with rice, a fried egg, and a drizzle of chilli oil.
