Directions

  1. 1Add yogurt, ginger garlic paste, lime or lemon juice, salt, chili powder, coriander powder, cumin powder, garam masala, and turmeric in a bowl and whisk it up.
  2. 2Coat your chicken thighs in the mixture and let it marinate for several hours or immediately start searing it on a high heat pan.
  3. 3Finely chop cucumber, cilantro, red onion, and tomatoes.
  4. 4Once you get a good char on both sides of chicken thighs, take it off and set it aside.
  5. 5Drop the heat to medium high, add ghee, onions, and ginger garlic paste. Cook until onions are soft and translucent.
  6. 6Add tomatoes and the same seasonings as before, cook it till they turn soft and mushy.
  7. 7Add washed basmati rice, mix it up, and add the remaining marinade and water or chicken stock.
  8. 8Add the chicken back on top, once it starts boiling, cover and let it cook for 25 to 30 minutes. Drop heat to simmer after covering.
  9. 9While that's cooking, make the raita by adding yogurt, water, salt, red chili powder, cumin powder, finely chopped red onion, tomato, cucumber, green chili, and freshly chopped coriander in a bowl and whisking it up.

  • 1 tbsp Salt
  • 0.25 tsp Red Chili powder
  • 0.5 tsp Cumin powder
  • 3 tbsp Red onion
  • 3 tbsp Tomato
  • 3 tbsp Cucumber
  • 1 Green Chili
  • 2 tbsp Freshly Chopped Coriander
