tiktok.com
Serves 3

Directions

  1. 1Cut the rump steak nice and thin.
  2. 2Add soy sauce, sesame oil, bicarbonate soda, and a little bit of cornflour to the beef.
  3. 3Leave the beef to marinate for about 15-20 minutes whilst you prep the sauce.
  4. 4For the sauce, mix black bean paste, oyster sauce, dark soy sauce, crushed garlic cloves, ginger, water, shoaxing wine and sugar all together.
  5. 5Leave the sauce to one side.
  6. 6Heat a wok or pan on high with a little oil.
  7. 7Sear the beef quickly in batches until just browned for a few minutes until it's nice and crispy.
  8. 8Remove the beef and set it aside.
  9. 9Add a bit more oil to the pan if needed.
  10. 10Fry garlic and ginger briefly until fragrant.
  11. 11Add sliced onion and bell peppers (and any other veg) to the pan.
  12. 12Stir-fry until the vegetables are nice and soft.
  13. 13Pour in the black bean sauce and let it bubble away and thicken.
  14. 14Return the beef to the pan and toss everything together until coated and glossy, about 1-2 minutes.
  15. 15Serve hot with steamed rice, tenderstem broccoli, and prawn crackers if desired.
