Serves 1

Directions

  1. 1Start by chopping scallions into 3-inch pieces, separating the whites from the greens.
  2. 2Slice a white onion.
  3. 3Mix your sauce by combining light and dark soy sauce, sugar, oyster sauce, mirin, and a touch of chicken stock to loosen it up.
  4. 4Blanch your chow mein noodles for a few seconds.
  5. 5Drain and pat them dry with some paper towel to remove as much moisture as possible.
  6. 6Heat neutral oil over high heat and add your scallion whites and onion.
  7. 7Sauté for about 15 seconds.
  8. 8Add your chow mein noodles.
  9. 9Turn the heat to high and add a touch more oil to the pan.
  10. 10Pan fry to get some color on the noodles and veggies.
  11. 11Add your sauce around the edge of the pan.
  12. 12Mix quickly to incorporate it evenly into the noodles and char the sugars in the sauce.
  13. 13Finish with scallion greens and bean sprouts.
  14. 14Continue mixing until slightly wilted and enjoy.
