Directions

  1. 1In a bowl, add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder and smoked paprika. Mix it together.
  2. 2Air fry or oven bake them at 200C/400F (flip halfway). Air frying time is 20-25 minutes, oven baking time is 30-35 minutes.
  3. 3While potatoes are baking, cook diced onions in a pan.
  4. 4Once onions have some color, add extra lean beef mince, Worcestershire sauce and the same seasonings used for the potatoes. Mix and cook through.
  5. 5Once beef mince is nearly cooked, add tomato paste and diced garlic cloves.
  6. 6In a bowl, add eggs and blended cottage cheese. Mix together and cook on low-medium heat, mixing gently every minute or so until cooked perfectly and fluffy. Season with salt and pepper after.
  7. 7Grab a warmed-up tortilla, evenly distribute the eggs, mince and potatoes. Top it off with sriracha mayo and chives.
  8. 8Roll the tortilla, toast it, and repeat the process for the other nine burritos.

  • 100 g Blended Cottage Cheese
  • 10 Large Tortillas
  • 25 g Sriracha Mayonnaise
