Easy Weeknight Chicken Parm Casserole

Directions

  1. 1Start by adding a half of a diced onion to a hot oil pan and cook it till those things are tender and golden.
  2. 2Then add one whole bell pepper, any color, but you don't need this part. Throw that part aside.
  3. 3Stir these up, cook these for a couple minutes before you add two to three minced garlic cloves.
  4. 4Just cook those for about a minute.
  5. 5Continue to make the sauce by adding one can of tomato sauce, one can of diced tomatoes, a quarter cup of chopped basil, a half a teaspoon of oregano, a quarter teaspoon of red pepper flakes and just stir this.
  6. 6Bring the sauce to a boil.
  7. 7Once it's boiling, turn the heat down and let it simmer for about 10 minutes.
  8. 8Add all of the sauce to a 9x13 baking dish.
  9. 9Bring in some chicken thighs that you already seasoned with salt and pepper and ploop those right into the sauce.
  10. 10Get a small mixing bowl, add one cup of panko breadcrumbs, one cup of freshly shredded parmesan cheese, a half a teaspoon of oregano, two tablespoons of basil, one tablespoon of olive oil.
  11. 11Stir this till all of it's combined.
  12. 12Start spooning heaping piles of this onto each one of those chicken thighs.
  13. 13Take the whole thing, put it in the oven at 350 for about 45 minutes.
  14. 14When it comes out, scoop up one of these chicken thighs, put it on a plate, get a bite and put the whole thing in your mouth.

  • You can omit the bell pepper if you don't want it.
