Korean Fried Chicken

Directions

  1. 1Turn on high heat on the stove.
  2. 2Pour two quarts of oil into a pot.
  3. 3Cut the fat out of the chicken thigh.
  4. 4Chop the chicken thigh into bite-sized pieces.
  5. 5Move chicken pieces to a bowl.
  6. 6Add half a teaspoon of salt to the chicken.
  7. 7Add one tablespoon of garlic to the chicken.
  8. 8Add a little bit of black pepper to the chicken.
  9. 9Crack one egg into the bowl with the chicken.
  10. 10Add one cup of potato starch to the chicken.
  11. 11Add a little bit of water.
  12. 12Mix everything together until the consistency is thick enough to lift the whole bowl with the chicken stuck to it, then add a little more water to thin it down to a consistency where it drips off the chicken.
  13. 13Carefully place the chicken pieces into the hot oil for about five minutes, making sure to throw the chicken away from yourself to avoid splashes.
  14. 14Remove the chicken from the pot and place it in a bowl lined with paper towels to drain excess oil.
  15. 15In a separate bowl, add three tablespoons of Gochujang, one and a half tablespoons of soy sauce, one and a half tablespoons of garlic, six tablespoons of ketchup, three tablespoons of sugar, and six tablespoons of corn syrup.
  16. 16Mix the sauce ingredients well.
  17. 17Beat the chicken to create air and make it crispier and crunchier.
  18. 18Double-fry the chicken for another two to three minutes.
  19. 19Pour the sauce into a pan and cook for a quick minute.
  20. 20Add the double-fried chicken to the pan with the sauce.
  21. 21Toss the chicken with the sauce until it's fully coated.
  22. 22Plate the chicken and finish with some sesame seeds.

  • 1.5 tablespoons garlic
  • 6 tablespoons ketchup
  • 3 tablespoons sugar
  • 6 tablespoons corn syrup
  • sesame seeds

Tips

  • When frying, throw the chicken the other way to avoid oil splashes.
  • Do not drop chicken from the top, it could splash hot oil.
  • Beating the fried chicken will create air and make the chicken crispier and crunchier.
  • If you don't have corn syrup, replace it with sugar.
