One Pot Sesame Chicken and Rice

Directions

  1. 1Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  2. 2Add chicken thighs and cook each side for 5 minutes or until browned.
  3. 3Remove the chicken from the skillet and set aside on a plate.
  4. 4Turn the heat down to medium-low.
  5. 5Stir in the uncooked rice along with paprika, gochugaru/chili powder, garlic powder, onion powder, and a pinch of salt and pepper.
  6. 6Cook the rice and spices for a minute.
  7. 7Add 2 cups of water to the pan.
  8. 8Give it a good stir and carefully add the chicken back into the pan.
  9. 9Cover with a lid and simmer for about 10 minutes until the liquid is almost absorbed.
  10. 10Combine 1/4 cup Tahini, 1/4 cup Honey, 2 tablespoons of soy sauce, 2 tablespoons of chili oil, and 1 tablespoon sesame oil in a small bowl and whisk to combine.
  11. 11Pour the sauce all over the chicken and rice.
  12. 12Simmer for another 5 minutes.
  13. 13Garnish with sesame seeds and spring onions.
