Directions

  1. 1Rinse the beans well.
  2. 2Add beans to a pot and cover at least an inch over with water.
  3. 3Bring the beans to a slow simmer.
  4. 4At the 30-minute mark, add 1 tablespoon of 100% pure salt, pepper, and garlic spice mix (OG from American Pitmaster Company) to the beans.
  5. 5Add two jalapeños and the diced up salt pork to the pot.
  6. 6Cover with the lid and keep simmering.
  7. 7If needed, add a little more hot water.
  8. 8Stir fry your bacon.
  9. 9Add onion, garlic, and a spice mixture of 2 teaspoons of OG and 1 teaspoon of comino to the bacon in the pan.
  10. 10Keep stirring.
  11. 11Add your Roma tomatoes and half of the cilantro to the mixture in the pan.
  12. 12At the two-hour mark, add the cooked mixture from the pan to the beans in the pot.

  • 2 Roma Tomatoes
  • 0.5 bunch Cilantro
  • 1 tablespoon Salt, Pepper, Garlic spice mix
  • 2 teaspoons OG Salt, Pepper, Garlic spice mix
  • 1 teaspoon Comino

Tips

  • Do not soak and drain the beans, as much flavor is lost that way.
