Marry Me Chicken Bites

Directions

  1. 1Cube the chicken breasts into large bite-sized pieces.
  2. 2Pat the chicken dry.
  3. 3Toss chicken with 1 tbsp each of olive oil and sun-dried tomato oil along with the seasonings.
  4. 4Heat neutral oil in a large skillet over medium-high heat.
  5. 5Once hot, add the chicken cubes.
  6. 6Cook for about 3-5 minutes per side until golden and sizzling.
  7. 7Reduce heat to medium-low, toss in butter and garlic.
  8. 8Gently sauté for 2-3 minutes until fragrant.
  9. 9Still using the same pan, deglaze with white cooking wine (optional) - scraping up the garlicky goodness stuck to the bottom.
  10. 10Add the minced shallot, chopped sun-dried tomatoes and 1 more tbsp of the sun-dried tomato oil then caramelize for 3-4 minutes, stirring often.
  11. 11Slowly pour in the heavy cream.
  12. 12Stir and bring to a light simmer.
  13. 13Add the fresh parmesan and reduce heat to low - let it thicken for 4-5 minutes.
  14. 14Lay down a generous bed of warm mashed potatoes (or rice).
  15. 15Place your chicken bites on top.
  16. 16Ladle that luscious marry me sauce right over the top.
  17. 17Finish with a sprinkle of fresh parsley if you’re feeling fancy.

  • 2 tsp garlic powder
  • 1 tsp seasoning salt
  • 1 tsp italian seasoning
  • 1 tsp black pepper
  • 0.25 cup white cooking wine
  • 2 tbsp butter
  • 5 garlic cloves, minced
  • 1 tbsp neutral oil
  • 1 shallot, minced
  • 0.25 cup sun-dried tomatoes, chopped
  • 2 tbsp sun-dried tomato oil
  • 0.75 cup heavy cream, room temp
  • 0.5 cup fresh parmesan cheese, grated
  • Fresh chopped parsley or basil, for garnish
  • 3 pounds russet potatoes or Yukon gold
  • 0.25 cup salted butter, melted
  • 5 garlic cloves
  • 0.75 cup milk or cream
  • Salt & pepper, to taste
