Directions

  1. 1Add two cups of all-purpose flour to a big bowl.
  2. 2Add two teaspoons of baking powder and about half a teaspoon of salt.
  3. 3Mix the dry ingredients with a whisk.
  4. 4Get three-fourths of a cup of warm water and add about two teaspoons of olive oil to it.
  5. 5Pour the water and olive oil mixture into the bowl with the dry ingredients.
  6. 6Mix the dough with a rubber spatula until combined.
  7. 7Cover the dough and let it rest for about 10 minutes to relax the gluten.
  8. 8After 10 minutes, flour your surface and transfer the dough onto it.
  9. 9Lightly flour the top of the dough.
  10. 10Roll the dough into a big ball.
  11. 11Cut the dough into six equal pieces.
  12. 12Roll each piece up into a ball.
  13. 13If the dough gets sticky, dust it with a little more flour.
  14. 14Take your rolling pin and roll each dough ball until it's about 6 inches in diameter.
  15. 15Get a skillet and turn your heat on medium-high until it's ready (when water disintegrates off the pan).
  16. 16Lay your pita in the pan.
  17. 17After about two minutes, once it starts to puff up, flip it over and cook for about another minute.
  18. 18For the last 30 seconds, cover the skillet with a lid to puff up the pita a bit more.
