Add two cups of all-purpose flour to a big bowl.

Add two teaspoons of baking powder and about half a teaspoon of salt.

Mix the dry ingredients with a whisk.

Get three-fourths of a cup of warm water and add about two teaspoons of olive oil to it.

Pour the water and olive oil mixture into the bowl with the dry ingredients.

Mix the dough with a rubber spatula until combined.

Cover the dough and let it rest for about 10 minutes to relax the gluten.

After 10 minutes, flour your surface and transfer the dough onto it.

Lightly flour the top of the dough.

Roll the dough into a big ball.

Cut the dough into six equal pieces.

Roll each piece up into a ball.

If the dough gets sticky, dust it with a little more flour.

Take your rolling pin and roll each dough ball until it's about 6 inches in diameter.

Get a skillet and turn your heat on medium-high until it's ready (when water disintegrates off the pan).

Lay your pita in the pan.

After about two minutes, once it starts to puff up, flip it over and cook for about another minute.

For the last 30 seconds, cover the skillet with a lid to puff up the pita a bit more.

Tips
If you want a softer pita, brush the outside with olive oil before putting it in the pan, but this is not necessary.
To puff it up a bit more for the last 30 seconds of cooking, cover it with a lid.
