Smashed beef kebab with cucumber yoghurt

Directions

  1. 1Combine the mince, grated onion, garlic, salt, pepper, paprika, allspice, cardamom, and cayenne pepper in a large bowl. Mix thoroughly until everything is well combined.
  2. 2Heat a large saucepan or cast iron pan over medium-high heat. Once very hot, use a spoon or your hands to place small, irregular chunks of the mince mixture onto the pan.
  3. 3Leave the meat to cook, undisturbed, for 6-9 minutes, until crisp and deeply caramelized and slightly charred on the bottom.
  4. 4Meanwhile, combine all the ingredients for the cucumber yogurt (Greek yogurt, grated cucumbers, chopped mint, garlic clove, and salt).
  5. 5Toss the meat around the pan, add the pine nuts and currants, and continue to fry for an additional 2-3 minutes until the meat is cooked and the pine nuts are golden and toasted.
  6. 6Spoon some cucumber yogurt onto a serving platter.
  7. 7Top the yogurt with the beef mixture.
  8. 8Finish it with a drizzle of pomegranate molasses and a sprinkle of fresh mint.
  9. 9Serve it on some rice or in a wrap and enjoy.

  • 1 small onion, grated
  • 4 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp paprika
  • 0.5 tsp allspice
  • 0.5 tsp cayenne pepper
  • 0.5 tsp black pepper
  • 0.25 tsp ground cardamom
  • 3 tbsp pine nuts
  • 2 tbsp currants (or raisins)
  • Pomegranate molasses
  • 350 g Greek yoghurt
  • 2 small cucumbers, grated
  • 3 tbsp finely chopped mint, plus extra for garnish
  • 1 garlic clove
  • 0.5 tsp salt

Tips

  • Don't rush the frying of the meat; this is where the flavor is.
  • Pine nuts get golden and toasted in the beef fat and the currants get chewy.
