1Mix tuna, mayonnaise, sriracha, salt, and pepper together and taste.
2Chop the spring onions and slice the cucumber and avocado.
3Cut one nori sheet into 4 smaller squares.
4Place a whole nori sheet on a piece of plastic wrap with the smooth side facing down.
5Dip your hands in a little water and spread a handful of rice in a square shape on the nori.
6Top the rice with cucumber, tuna, spring onions, sesame seeds, avocado, extra rice, and finally a small piece of nori.
7Close the onigirazu by moistening the nori with a little water and folding the corners in, first the nori and then the plastic wrap.
8Cut the wrapped onigirazu in half.

Tips
For the sushi rice: Wash the rice in cold water until the water is no longer white. Drain, add 5 dl of water, bring to a boil, and cook covered for 15 minutes. Turn off the heat and let the rice rest for 10 minutes, still covered. Heat vinegar in a pot or microwave, add salt and sugar. Once the sugar is dissolved, spread the rice onto a platter, add the vinegar mixture, and mix a few times. Let it cool slightly before using.
Store the onigirazu in the fridge for about half an hour before cutting.
