Plant-Based Spam Musubi

Directions

  1. 1Place a nori sheet into a clean tofu container, then top with a layer of cooked rice.
  2. 2Pour the mung bean egg mixture into a rectangular pan and cook into a rolled omelet shape.
  3. 3Remove the omelet from the pan and slice into a rectangle that fits the width of your container.
  4. 4Place the sliced omelet on top of the rice layer in the container.
  5. 5Slice the extra firm tofu into a rectangular shape.
  6. 6Fry the tofu slices in the pan until golden brown.
  7. 7Add a mixture of soy sauce, mushroom oyster sauce, brown sugar, garlic powder, smoked paprika, and white pepper to the pan and coat the tofu.
  8. 8Place the glazed tofu on top of the omelet layer in the container.
  9. 9Fold the overhanging edges of the nori sheet over the tofu, then invert the container onto a board to unmold the musubi.
  10. 10Slice the musubi into four equal pieces.

  • 1 whole nori sheet
  • 1/2 cup cooked rice
  • 1/2 cup mung bean egg mixture
  • 6 oz extra firm tofu
  • 2 tbsp soy sauce
  • 1 tbsp mushroom oyster sauce
  • 1 tsp brown sugar
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp white pepper
