Directions

  1. 1Add brown sugar, granulated sugar, and very soft butter to a mixing bowl.
  2. 2Mix the wet ingredients using a stand mixer.
  3. 3In a separate bowl, mix all dry ingredients together.
  4. 4Add the dry ingredients to the wet ingredients and mix gently until combined.
  5. 5Add chocolate chips and mix just enough to combine.
  6. 6Once the cookie dough is crumbly, finish assembling the dough by hand.
  7. 7Weigh out each cookie dough ball (around 50g) and place them on a baking sheet, leaving enough space for the cookies to spread.
  8. 8Place 3 chocolate chips on top of each cookie dough ball.
  9. 9Bake at 350°F for 12 minutes. Let the cookies chill in the fridge for 20 minutes before baking.

  • 180 g brown sugar
  • 80 g granulated sugar
  • 1 egg
  • 1 egg yolk
  • 280 g flour
  • 20 g corn starch
  • 12 g baking soda
  • 220 g chocolate chips
