Cheesy Beef Potato Pockets

Directions

  1. 1Cook down some diced onions on medium heat until soft.
  2. 2Add diced chilies to the pan with the onions for heat (optional).
  3. 3Add lean ground beef to the pan and let it get a crispy sear.
  4. 4Add garlic powder, smoked paprika, black pepper, mixed herbs, and salt to the beef.
  5. 5Cook the beef through until browned.
  6. 6Set the cooked beef aside.
  7. 7Boil peeled potatoes in salted water for 15 minutes until fork-tender.
  8. 8Drain the water from the cooked potatoes.
  9. 9Mash the potatoes until smooth.
  10. 10Add mashed potatoes to a bowl with plain flour, one egg, and a pinch of salt.
  11. 11Mix the ingredients until a dough forms.
  12. 12Slice the dough into 8 equal pieces.
  13. 13Lightly grease your hands.
  14. 14Flatten a piece of dough into the palm of your hand.
  15. 15Add 1/8 of the meat filling to the flattened dough.
  16. 16Add 20g of low-fat cheese on top of the meat filling.
  17. 17Gently close up the dough to form a ball.
  18. 18Flatten the ball slightly.
  19. 19Add the flattened potato pocket to a pan with cooking spray.
  20. 20Cover the pan with a lid and cook for 1-2 minutes on each side until golden brown.
  21. 21Repeat the process for all 8 pockets.
  22. 22Enjoy the cheesy beef potato pockets.
