Add 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of cornstarch, 0.5 teaspoon of baking soda, 1 teaspoon of sugar, and 0.5 teaspoon of black pepper to the bag with the beef.
Seal the bag, leaving some air inside, and shake and massage the beef to coat with the marinade.
Release the air from the bag and give it one last good massage. Set aside for about 15 minutes.
Rough chop 4 garlic cloves.
Cut 1 onion into thirds.
Dice 1 orange bell pepper and 1 green bell pepper.
In a measuring cup, combine 0.25 cup of beef broth (or water), 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of hoisin sauce, 1 teaspoon of sugar, 1 teaspoon of cornstarch, and 1 teaspoon of dark soy sauce.
Mix all ingredients in the measuring cup well.
Place the marinated beef onto the hot Blackstone griddle and spread it out.
Add all the chopped vegetables (garlic, onion, orange bell pepper, green bell pepper) to the griddle with the beef and sprinkle more black pepper if desired.
Stir and cook the beef and vegetables until done.
Stir the prepared sauce in the measuring cup again and pour it over the cooked pepper steak on the griddle.
Toss everything together to coat with the sauce.
Serve the pepper steak from the griddle into a bowl.
