Make a cornstarch slurry by combining cornstarch and water. Mix well.

Coat diced chicken thighs with cornstarch.

Heat neutral oil in a pan over medium-high heat.

Add the coated chicken to the pan, spreading pieces apart.

Fry chicken on each side until golden and crispy.

Remove the fried chicken and set aside.

In the same pan, on medium heat, add ginger, garlic, and red chili. Fry for 10 seconds.

Add hsin sauce, regular soy sauce, brown sugar, and sesame oil to the pan.

Mix in the cornstarch slurry.

Simmer until the sauce thickens.

Add the fried chicken to the sauce and toss to coat evenly.

Serve hot, garnished with green onions and red chili.
