Lemon Posset

Directions
- 1Zest the lemons.
- 2Put the cream, sugar, and lemon zest into a saucepan.
- 3Heat gently over a low heat until the sugar has dissolved and the cream is just under scalding point.
- 4Remove from the heat and add the juice of your 4 lemons.
- 5Add to cocktail glasses or individual ramekins.
- 6Chill in the fridge until set.
- 7Decorate with lemon slice and a mint sprig.

Tips
- If you don't love the texture of the zest, strain the mixture before you pour into glasses.
