Toss sliced steak with soy sauce, Worcestershire, garlic powder, and a generous amount of salt & pepper. Set aside.

Heat a skillet over medium heat with a little oil or butter.

Add onions, sugar, and salt. Cook 15-20 minutes, stirring occasionally, until soft, golden, and jammy. Remove from pan and set aside.

Crank heat to medium-high/high. Add steak in a single layer (work in batches if needed).

Sear 2–3 minutes per side until deeply browned. Remove and set aside. Lower heat to medium.

Add butter to the same pan. Once melted, add garlic and shallot — cook ~30 seconds until fragrant.

Stir in lemon juice, Dijon, parsley, chives, thyme, cayenne, chili flakes, smoked paprika, and salt.

Add steak back to the pan.

Toss to coat in the butter sauce for 1–2 minutes.

Preheat your oven to 375°F.

In an oven-safe baking dish, layer the bottom halves of your sliced brioche buns with smoked provolone cheese.

Add a generous layer of caramelized onions, followed by your cooked steak, then top with more cheese.

Place the top halves of the brioche buns on top.

Cover with foil and bake for 15–20 minutes, or until the cheese is fully melted.

Remove the foil, brush with garlic butter, and bake uncovered for an additional 4–5 minutes until the buns are golden and crisp.

Take out of the oven, brush with more garlic butter, and serve warm.

1 heaping tbsp chives, chopped
1 tsp thyme
1 tsp cayenne powder
0.5 tsp red chili flakes
0.5 tsp smoked paprika

0.25 cup unsalted butter, melted
2 tbsp parsley, freshly chopped
1 heaping tsp garlic powder
