Banana Pudding Cookies

Directions

  1. 1Add two cups of flour to a mixing bowl.
  2. 2Then add one and a quarter teaspoons of kosher salt, a half a teaspoon of baking soda, a quarter teaspoon of baking powder, and one box of vanilla instant pudding.
  3. 3Whisk all these dry ingredients together real quick.
  4. 4Once they're all combined, set this aside.
  5. 5Grab a larger mixing bowl.
  6. 6Add two sticks of room temperature unsalted butter.
  7. 7Then add two-thirds cups of packed light brown sugar, and one-third cup of granulated sugar.
  8. 8Gently beat this until it's well combined.
  9. 9Put a large banana in a bowl, without the peel.
  10. 10Mush it up with a fork.
  11. 11Then add one egg yolk, and one and a half teaspoons of vanilla extract.
  12. 12Then add all of this to your butter mixture.
  13. 13Beat it once more until combined.
  14. 14Bring that flour mixture back in, and then beat this one last time, but on the lowest setting.
  15. 15Set this aside and grab about 25 Nilla wafers.
  16. 16Put them in a Ziploc bag and gently start breaking them up.
  17. 17Take your broken Nilla wafers and put them into the bowl.
  18. 18Also add three-quarter cups of white chocolate chips.
  19. 19Grab a mixy-doodle and gently fold those in.
  20. 20Grab a fairly large scoopy-doodle.
  21. 21Scoop up some dough and ploop it onto a parchment-lined baking sheet.
  22. 22Ploop them all.
  23. 23Throw this whole thing in the oven at 350 degrees for about 10 to 14 minutes.
  24. 24When you think they're ready, just let them chill.
