Add tomatoes to a large baking dish in a single layer. Drizzle with olive oil.

Season with salt, pepper, red pepper flakes, garlic, parsley, and oregano.

Bake at 350°F for 16–20 minutes until tomatoes burst.

Mix butter, garlic, salt, herbs, and parmesan. Spread on baguette slices.

Toast crostinis for 5–7 minutes until golden.

Lightly mash tomatoes and drain some liquid. Top with parmesan, basil, and burrata.

Stir, serve hot, and scoop with crostinis.

2 pints grape tomatoes
0.5 tbsp olive oil
4 cloves garlic, minced or smashed
1 tsp dried oregano
1 tsp fresh parsley
0.5 tsp red pepper flakes
to taste Salt & pepper
2 oz burrata (balls or stracciatella)
0.25 cup shredded parmesan
1 handful fresh basil, torn
1 French baguette, sliced
4 tbsp unsalted butter, melted
2 cloves garlic, minced
0.25 tsp salt
1 tbsp parsley + basil
2 tbsp grated parmesan

Tips
Gently smash tomatoes halfway through baking if needed.
Drain some liquid from the tomatoes after mashing.
Serve hot.
