Breakfast Burrito Casserole

Directions

  1. 1Whisk and season a dozen eggs, then pour them into a hot oiled skillet.
  2. 2Scramble the eggs until almost done, then put them in a bowl and set aside.
  3. 3Wipe out the pan, add a little oil, then add a diced onion and a diced bell pepper.
  4. 4Sauté the onion and bell pepper until they soften up and have a nice color.
  5. 5Add one can of mild green chilies, cook for about a minute, and then set this aside.
  6. 6Add 2 lbs of breakfast sausage and a package of bacon cut into small pieces to the pan.
  7. 7Cook all of this together until it's well cooked, then drain the grease.
  8. 8Add a block of shredded pepper jack cheese to the meat mixture and set aside to let the cheese melt.
  9. 9Grab a greased baking dish and add two tortillas, cutting them to fit if desired.
  10. 10Make a layer of red or green enchilada sauce.
  11. 11Add half of the meat mixture, then half of the eggs, then half of the veggies.
  12. 12Add a layer of shredded cheddar cheese.
  13. 13Repeat the layers: tortillas, enchilada sauce, meat mixture, eggs, veggies, cheddar cheese.
  14. 14Add one more time: tortillas, the last of the sauce, and one more layer of cheese.
  15. 15Throw the whole thing in the oven at 350 degrees Fahrenheit for about 30 minutes.
  16. 16Once it's cooled off, grab a spatula, cut out a piece, and serve.

  • some enchilada sauce, red or green

Tips
