Spicy Blueberry Brie Jalapeño Poppers

Directions

  1. 1Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. 2Slice the jalapeños in half lengthwise and remove the seeds and membranes.
  3. 3Place the jalapeño halves on the prepared baking tray and lightly brush with olive oil.
  4. 4Fill each jalapeño with a cube of creamy brie.
  5. 5Top with a few fresh blueberries and a small spoonful of blueberry preserves.
  6. 6Sprinkle with chopped pecans and fresh thyme.
  7. 7Season lightly with black pepper.
  8. 8Bake until the brie is melted and bubbly and the jalapeños are just tender.
  9. 9Remove from the oven and drizzle with honey while still warm.
  10. 10Garnish with fresh parsley or thyme and serve immediately.

  • 1 tsp fresh thyme leaves
  • 1 tbsp honey
  • 1 tbsp olive oil

  • fresh parsley or thyme, for garnish (optional)
