Directions

  1. 1Prepare the yeast: combine 150 gr of San Francisco yeast at room temperature, 75 gr of water, and 75 gr of whole flour. This yeast will be ready in 3 hours.
  2. 2For autolysis, combine 1 kg of flour and 650 gr of water, and start a 3-hour autolysis.
  3. 3After 3 hours, add 300 gr of natural yeast to the autolysis mixture.
  4. 4Add 15-20 gr of unrefined cane sugar for 1 kg of flour to the dough.
  5. 5Add salt to the bottom of the mixing bowl.
  6. 6Once the dough is ready, add oil in one shot, then carefully fold the dough.
  7. 7When the dough cleans the bowl, start making folds.
  8. 8Let the dough rest for 5 minutes before giving it the last folding.
  9. 9Let the dough stand for 3 hours at room temperature, then cut it into preferred portions.
  10. 10After the dough has risen for 3 hours, cut it into 2 pieces of 900 gr.
  11. 11Give the dough a loaf shape.
  12. 12Let the dough stand for 24 hours at 4 degrees.
  13. 13Cover the tray with the first pizza base.
  14. 14Spread one layer on top of the other to create a pizza sandwich.
  15. 15Drizzle extra virgin olive oil on top.
  16. 16Let the pizza tray stand for at least 10 minutes before baking.
  17. 17Bake the pizza in the oven at 250°C for 15-18 minutes.
  18. 18For the topping, prepare a habanero jam by cooking habanero with 1 kg of sugar, 1 lt of apple vinegar, salt, and aromas, then blend it all.
  19. 19Add cheddar fondue to the habanero jam.
  20. 20Top the baked pizza with mortadella, boiled tongue, cucumber, cheddar fondue, and habanero chili jam.
