Roughly chop the poblano chiles and calabaza.

Heat oil in a skillet and add the chopped poblano, calabaza, a piece of onion, serrano chiles, and garlic cloves.

Cover the skillet and cook for 5 to 7 minutes.

Stir the vegetables, cover again, and cook for another 10 minutes.

Transfer the cooked vegetables to a blender.

Add salt and pepper to the blender and blend until smooth.

While blending, pour in a thin stream of oil until the mixture reaches a creamy consistency.
