1Heat oil in a pan, then add green cardamom powder, black cardamom, dried coriander powder, and salt. Fry for 10-15 seconds.
2Add chicken and chopped onion, then roast on high flame until the chicken turns light golden.
3Add roasted cumin, ginger garlic paste, vinegar, soy sauce, red chili sauce, and chicken powder. Mix well, add fresh coriander, and cook on high flame for 5-6 minutes.
4Add potatoes and salt, mix, then cover and cook on medium to low flame for 6-7 minutes.
5Add red chili powder, turmeric, tomato paste, and chopped green pepper. Fry on medium to high flame until the raw tomato smell is gone.
6Add whisked yogurt and water, then stir in mace/nutmeg powder, cinnamon powder, hot spices, and whole green chilies. Cover and cook on medium flame until the water dries.
7Finish with crushed black pepper and fresh green coriander.

1 pinch mace and nutmeg powder
1 small piece cinnamon powder
0.5 tbsp hot spices
6 whole green chili

Tips
Do not over-fry the chicken in the beginning or it will become hard.
Keep potatoes soaked in water after cutting to maintain their texture.
Chicken powder is optional but adds amazing flavor.
Do not use too much water during the final step so the spices remain concentrated on the chicken and potatoes.
