6For the dry batter, combine a cup of potato starch with 2 tablespoons of corn starch and a pinch of salt.
7Dredge your chicken thighs and really pack the starch in, then shake away the excess.
8Let the coated chicken sit in your fridge for another 10 minutes to allow the coating to set.
9Pan fry the chicken in 350° oil for 8 to 10 minutes, flipping halfway in between.
10For the sauce, combine equal parts butter, minced garlic, soy sauce, and honey.
11Let the sauce reduce slightly.
12Completely cover the crispy chicken in the sauce.
13Let the chicken cool slightly.
14Slice the chicken up.
