Bacon Onion Jam

Directions

  1. 1Cook the bacon until crispy, then remove it from the pan using a skimmer, leaving the bacon fat behind.
  2. 2Pour out any excess bacon fat, leaving just enough to sauté the onions, ensuring to scrape the bottom of the pot for flavorful bits.
  3. 3Add two large, diced onions to the pan and caramelize them until golden brown.
  4. 4Return the cooked bacon to the pan with the caramelized onions.
  5. 5Season with chili peppers, black peppers, salt, fresh thyme, and minced garlic.
  6. 6Add brown sugar, adjusting the amount based on the desired sweetness and the sweetness of your vinegar.
  7. 7Pour in maple syrup and maple balsamic vinegar, mixing well to combine.
  8. 8Add smoked paprika to the mixture.
  9. 9Lower the heat and let the jam cook for a few minutes until well-reduced.
  10. 10Stir in fresh parsley.
  11. 11Add a little bit of bourbon and mix it in.
  12. 12Add a bit more fresh parsley at the last minute.
  13. 13Taste the jam to ensure it is perfectly seasoned.
  14. 14Serve the bacon onion jam, perhaps on top of a beautiful steak.
